These natural microorganisms slowly ferment the dough, often for 12 to 24 hours or even longer.
During this time, they don’t just make the dough rise-they also transform it.

Prebiotics vs. Probiotics: What’s the Difference?
These two words are often confused.
Probiotics are living microorganisms that can support a healthy balance of bacteria in the digestive system. Foods like yogurt, kefir, kimchi, and sauerkraut contain live probiotic cultures.
Prebiotics, on the other hand, are types of fiber and carbohydrates that feed the beneficial bacteria already living in your gut.
Although sourdough contains living microorganisms during fermentation, the heat of baking destroys those live cultures. That means baked sourdough is not considered a probiotic food.
However, sourdough may still provide prebiotic compounds and fermentation byproducts that can support a balanced diet.
The Role of Natural Fermentation Acids
As the sourdough starter ferments the dough, it produces natural organic acids, primarily lactic acid and acetic acid.

Scientists continue to explore how fermentation and cooling may influence resistant starch levels in foods, including sourdough bread.
Why Some People Say They Tolerate Sourdough Better
Many people tell me they feel more comfortable eating naturally fermented sourdough than conventional bread.
There are several reasons researchers believe this may happen.
During long fermentation, the microorganisms begin breaking down some of the carbohydrates and proteins naturally found in flour. This process also reduces naturally occurring compounds called phytates, which can bind certain minerals.
